I love my Global knives for most cooking prep tasks, but for finessing the legs off a goose or turning a boneful piece of meat into a boneless one, hard to top the value of
plastic-handled eicker trade knives. The one I just used on the christmas geese cost less than £10.

"Trade", or Tripe, or Poultry? I have been looking for a good de-boning knife since Thanksgiving....
Trade knives in that they are generally sold to butchers and food prep folks rather than in the kitchen section of retail stores. Not sure where they are available in the US, but they shouldn't be expensive.
The one I use is the boning knife "narrow and straight".
